FIELD: food industry.

SUBSTANCE: device contains a passage formed by a pair of cutting elements installed so that to enable controllable movement across the passage direction (D) and a controlling means. The controlling means contains a pair of sliding elements (installed so that to enable movement across the passage direction (D) together with the cutting elements of the pair of cutting elements positioned thereon) and controlling surfaces (matching the sliding elements and made on the both lateral sides of the support element towards which the sliding elements may move for implementation of controlling deviation adjusting the passage width) as well as longitudinal grooves made on the both lateral sides of the support elements and matching the cutting elements. The cutting elements may enter the longitudinal grooves. The support element is customised for the said device. The treatment machine, in particular, one intended for poultry carcasses filleting, has one of its treatment stations equipped with the said device. According to the method for two-sided lateral cutting of animal carcass skin, a cut is made on either lateral side of the carcass parallel to the adhesion trajectory of the sliding element sliding along such trajectory across the carcass outside. The cutting element is guided so that, then the support element is not loaded, the cutting element enters the air gap without contact.
