FIELD: food industry.
SUBSTANCE: invention relates to the farm industry field and is intended for determination of sanitary and hygienic status of milk. One evaluates the total quantity of bacteria and somatic cells in milk. Evaluation is performed according to the data of measurement of bioelectric potential in cow skin biologically active centres No1, No3, No16, No 20, No 38, No 39, No 44 till milk stripping; the average mean of bioelectric potential is identified; at a value less than 32.8 mcA milk is classified as prime grade; at a value equal to 32.8 mcA and higher - as first grade.
EFFECT: method allows to quickly and efficiently evaluate sanitary and hygienic status of milk.
