FIELD: food industry.

SUBSTANCE: invention relates to food industry. The method involves preparation of dough of flour and other initial ingredients and preparation of a fruit filling of fresh fruits with a thickener introduction. The fruit filling is represented by berries of varieties applicable for this purpose; each portion of the filling is prepared of berries of one or several varieties or of a certain variety fruit where each portion of the filling is prepared of whole or sliced fruit. The fruit filling production is performed with preliminary dividing of the filling into separate portions consisting of one or several fruits or their slices with application of a thickener injection on each portion; the thickener consists of a thick sweet syrup prepared of water solution of sugar powder with sugar concentration equal to 15 - 55%; the temperature of the filling being glazed is maintained within the range of 0-15°C during 6 - 17 minutes.

EFFECT: invention allows to achieve versatility and stability of production, ensure the manufactured product high taste qualities remaining unchanged after storage and heating before consumption.
