FIELD: food industry.

SUBSTANCE: method envisages fine milling of initial agar, agar soaking in water during the time for agar swelling with subsequent treatment with ultra sound to intensify diffusion and mass-exchange processes. Then at least one time one adds water solution of water-soluble organic solvent till the solvent content in the ready mixture is equal to 10 - 99 wt %. The organic solvent includes at least one of the following substances: methanol, ethanol, propanol, isopropanol, tert-butanol, acetone, tetrahydrofuran, acetonitrile, ethylene glycol, propylene glycol, dimethoxyethane, dimethyl formamide and dimethylsulphoxide. Then suspension is heated in a closed reactor without oxygen access to a temperature equal to 100-160°C, maintained at such temperature, cooled to a temperature lower than that of the solvent boiling. Then one separates the solid and liquid parts of the suspension, at least one time washes agar agar moist powder with water-free organic solvent; agar agar is dried with capture and condensation of vapours of organic solvent and water.

EFFECT: invention allows to simplify the method, provide for its safety and obtain natural agar agar capable of dissolution in water at a temperature no higher than 85°C without modification of chemical molecular structure and content of any additional components in the ready product.
