FIELD: food industry.
SUBSTANCE: installation for production of smoked products with developed structure and external smoke supply contains a smoking chamber, connected to the system of fume generation and providing vacuum and condensation of moisture. Smoking chamber located in vertical plane, consists of two parts: upper made in the form of de Laval nozzle and divided into several zones, upper expanding part of de Laval nozzle serves to form porous structure, behind it there is a steam gate, evacuation zone and zone of action of electrostatic field with discharge electrodes arranged in it, providing the zone of action of electrostatic field and lower conical part with saturation zone located in it product smoking components and adjacent to the bottom divergent section of de Laval nozzle in which there is a division unit, degassing zone is perforated, is equipped with casing and is connected to a system providing vacuum, lower conical part of the smoking chamber is perforated and is also equipped with jacket connected to a system of fume generation on the smoking chamber vertically mounted extruder with delivery auger and loading bin.
EFFECT: invention allows to saturate the product with the flavour of smoke, increase the storage life of ready product, increase speed of directed deposition of smoking components on the inner surfaces of the pores of the product, enhance the product quality.
