FIELD: food industry.
SUBSTANCE: invention relates to food industry. The method for production of soya protein isolate where the content of soya protein is at least 90 wt % (H×6.25) in terms of dry substance weight includes extraction of a soya protein source with a water solution of a calcium salt with pH from 1.5 to 5 for soya protein solubilisation from the soya protein source and formation of a water solution of soya protein. Then soya protein water solution is separated from the protein source remains. Soya protein water solution is concentrated with the help of a selective membrane technology with formation of a concentrated soya protein solution; then the soya protein concentrated solution is subjected to diafiltration for production of concentrated and diafiltered soya protein solution. Then such concentrated and diafiltered soya protein solution is dried.
EFFECT: invention allows to produce a soya protein isolate with high protein concentration that is soluble in an acidic medium.
