FIELD: food industry.
SUBSTANCE: invention relates to food industry. The canola protein product is manufactured by way of partial concentration of a supernatant produced during canola protein micellar mass sedimentation till concentration is equal to 50 g/l or less or by way of concentration of a supernatant produced during canola protein micellar mass sedimentation till concentration is equal to at least 50 g/l. One adds a calcium salt to the supernatant produced without concentration stage, to provide for conductivity equal to 5 - 30 mSm, or to the partially concentrated supernatant to provide for conductivity equal to 2 - 30 mSm till calcium phytate sediment formation. The sedimented calcium phytate is removed from the produced solution till production of a clear solution. Optionally, the clear solution pH is regulated till the value is equal to 2.0 - 4.0. In case of concentration stage absence or partial concentration stage presence one performs the clear solution concentration till concentration is equal to at least 50 g/l. According to another version, one performs addition of initial quantity of a calcium salt to the supernatant produced during canola protein micellar mass sedimentation till conductivity is equal to 1 - 3.5 mSm which is insufficient for calcium phytate sedimentation stimulation. pH is regulated till the value is equal to 2.0 - 4.0; one performs partial concentration till concentration is equal to 50 g/l or less. One adds additional quantity of the calcium salt to provide for conductivity equal to 4 - 30 mSm till sediment formation. The sediment is removed from the produced solution; the clear solution is concentrated till concentration is equal to at least 50 g/l, optionally, diafiltered and decoloured. The produced protein solution is dried. The concentration and/or diafiltration stage is/are performed so that the dry canola protein product approximately contains from 60 to less than 90 wt % (N×6.25) of protein in terms of dry substance weight. Other versions of the canola protein product manufacture are possible.
EFFECT: inventions group is aimed at manufacture of a product suitable for enrichment with acid medium protein.
