FIELD: food industry.
SUBSTANCE: soy protein product with a protein content equal to at least 60% (by weight) (N×6.25) with respect to the dry weight, mixed with water-soluble powdered materials to produce aqueous solutions of the mixture which may represent a powdered beverage and which can be dissolved in an acidic solution. The product is obtained as follows. The soy protein source is extracted with aqueous solution of calcium chloride, optionally containing an antioxidant, to solubilize the soy protein and to form the aqueous solution mixture. The solution is diluted, if needed. The pH of the solution is adjusted to a pH equal to 1.5 to 4.4. The soy protein solution is separated from the remaining soy protein source. If needed, the acidified solution is concentrated while maintaining the ionic strength substantially constant, by means of the technology using selective membranes. It is diafiltrated, if needed. It is dried to obtain a soy protein product.
EFFECT: obtaining a product soluble in water, thermostable in solution at acidic pH values, and useful for the protein enrichment of aqueous systems, the aqueous solution is transparent with acidic indices.
