FIELD: food industry.
SUBSTANCE: method envisages blood removal simultaneously with back bone trunk slitting. One passes the back bone (with radial and side bones removed) through a cutting clearance carving on the fish abdominal side along the whole length till the dorsal fins bases. Fish fillet flesh is coated with protective surfaces converging near the cutting surfaces; at least two protective surfaces form the cutting clearance. Washing liquid under pressure is released on the back bone being passed between the protective surfaces during carving. The device contains two back bone disc blades which are positioned wedge-wise and slant-wise and generate the protective surfaces. A cleaning jet directed at the cutting clearance is envisaged.
EFFECT: invention allows to reduce blood quantity in fish flesh separated from bones.
