SUBSTANCE: group of inventions relates to a method, a device and a system for processing gutted fish. Device 1 comprises first conveyor means 3 for moving gutted fish 2 in direction of transportation, wherein first conveyor means 3 further includes means 4 for gutting and retaining gutted fish on conveyor means 3, first imaging means 5 for obtaining image data and fish position data on a first conveyor means, computing means 6, a first cutting unit 7, comprising a set of water-jet devices 8 for making incisions in the abdominal walls along the intermuscular bones during movement of the fish on the first conveyor means 3 and a means for separating the head from the fish with or without clavicle, second cutting unit 9, comprising two pairs of cutting knives 10/11 for performing dorsal and abdominal cuts in fish during movement of fish on first conveyor means 3, third cutting unit containing a carving knife to separate the fillet from the fish ridge by making cuts along the back fins of the fish. First imaging means and computing means determine the position of the fish on the first conveyor means and the position of the intermuscular bones in each fillet of each fish, and also determining a cutting pattern for a set of water-jet devices in order to perform incisions in the abdominal walls along the intermuscular bones. First cutting unit is located in front of the second cutting unit, to perform incisions along the intermuscular bones before the second cutting unit begins to separate the fillet from the ridge.
EFFECT: group of inventions provides accurate determination of the position of intermuscular bones in eviscerated fish, which improves their removal.
