SUBSTANCE: method envisages the separation of abdominal pieces (94) of every fish (9) by way of continuous curvilinear double dividing cut. Each abdominal piece (94) is simultaneously divided into two parts, cut in parallel, completely separated from each other and containing skin; such parts are drawn away from each other. The first part has the shape of a narrow curvilinear strip with intermuscular bones; the strip width corresponds to that of the intermuscular bones row and is restricted thereby. The second part has the shape of a separated abdominal piece (94) meat fragment containing no intermuscular bones and determined by its major part with a curvilinear cut. The device (1) includes transportation means (11) for fish (9) movement and an abdominal piece cutting device (3) that contains two pairs (4) of cutting tools (5) for the complete separation of the abdominal pieces (94). The guiding device (2) contains a guide capable of elevation movement in accordance with the height of the lateral side of the fish (9). The guiding device (2) adjusts, orients and guides the pairs (4) of cutting tools to perform a curvilinear double dividing cut.
EFFECT: fish treatment process simplification and acceleration.
