FIELD: chemistry.

SUBSTANCE: invention relates to a method of producing antioxidant microcapsules having a sodium alginate shell. Said antioxidant is quercetin, which is dissolved in methyl carbinol and the obtained mixture is dispersed into a solution of sodium alginate in acetone in the presence of an E472c preparation while stirring. Carbinol and water are then added and the obtained suspension of microcapsules is filtered out and dried.

EFFECT: invention provides a simple and fast process of producing quercetin microcapsules and increases mass output.
