FIELD: food industry.
SUBSTANCE: invention relates to food industry. Complex coacervates water dispersion produced by the method involving the following stages: production of water solution of at least one anionic polymer; a water-soluble antioxidant, a stabiliser and at least one hydrophobic substance addition into the polymer and stirring with high shift to produce an emulsion (the water-soluble antioxidant added before stirring with high shift); addition of at least one cationic polymer into the emulsion; stirring with high shift to produce a complex coacervates water dispersion; in the process of the complex coacervates water dispersion production the temperature is maintained at the level lower than 30°C. The coacervates may be used as an ingredient in food products, for example, in beverages, dry food products and semi-humid food products. Additionally, the present invention relates to methods for manufacture of complex coacervates and food products.
EFFECT: invention allows to obtain a hydrophobic substance, resistant to oxidation and hydrolysis in acid food products, pH index being up to 3,0.
