SUBSTANCE: invention relates to beverages and their production methods. The beverage includes citrus juice and at least one microencapsulated phytochemical citrus substance that may additionally include citrus flavonoids or tocopherol. The beverage may additionally include at least one unencapsulated hesperidin, unencapsulated naringin and unencapsulated limonin. The method envisages production of at least one phytochemical citrus substance, its microencapsulating and the microencapsulated phytochemical citrus substance mixing with citrus juice.
EFFECT: invention ensures reduction of the bitter taste of a citrus juice based beverage and a content of beneficial substances that is the same as or even higher than in natural juice.
