FIELD: food industry.

SUBSTANCE: invention relates to a method for liquid sugar production and to a device for such method implementation. The method involves Stage (1) of cellulase addition isolated from Trichoderma genus filamentous fungus to cellulose for primary hydrolysis performance, the stage (2) of addition of fresh cellulase isolated from Trichoderma genus filamentous fungus to Stage (1) hydrolysate for performance of secondary hydrolysis and Stage (3) whereat Stage (2) hydrolysate is subjected to separation into solid substance and liquid to produce liquid sugar wherefrom a regenerated enzyme is produced; the regenerated enzyme produced at Stage (3) is used at Stage (1) of the next and further processes of sugar production, the method involving repetition of Stages (1)-(3) two or more times. The device for implementation of the liquid sugar production method contains the following components: a hydrolysis reservoir whereto a pipe for supply of regenerated enzyme and a pipe for supply of fresh enzyme are connected, a device for separation of the hydrolysate solid substance and liquid, a liquid sugar reservoir with a water supply pipe and a device having an ultrafiltration membrane.

EFFECT: invention is aimed at achievement of higher effect with regard to reduction of the quantity of enzyme in the method for production of liquid sugar from cellulose.
