FIELD: food industry.

SUBSTANCE: dough pieces proofing device contains a thermally insulated rectangular chamber and a belt-chain conveyor including a return strand and vertical loaded strands moving in forced circulating steam air medium being created by the inner climate installation consisting of a transversally mounted steam-humidification tube and calorifiers group, transversally positioned behind the steam-humidification tube in the lower part of the thermally insulated chamber; each calorifier is equipped with an axial circulation blower placed in the diffuser housing as well as an air drier installed on the device top; the specificity is as follows: along the steam humidification tube length, its water steam release holes are made within the limits of the width of an individual calorifier flow cross-section; the total width of the flow cross-section of the calorifiers group is equal to no less than 60% of the inner width of the thermally insulated chamber; the longitudinal axis of the steam humidification tube is shifted downwards relative to the calorifiers symmetry horizontal axes so that creation of forced circulating steam air medium takes place at the level of the calorifiers horizontal symmetry axes; near the steam-humidification tube one places a transversal unit of ultrasonic humidifiers working out microscopic water drops moistening the thermally insulated chamber in the flow of forced circulating steam air medium; the air drier is in the form of a converging perforated box placed over the horizontal zone of the return strand of the belt-chain conveyor so that the box holes provide for perpendicular blowing of the return strand of the belt-chain conveyor with the holes total area equal to no more than one area of the box inlet section.

EFFECT: invention allows to produce quality bread goods without dough pieces adhesion.
