FIELD: food industry.
SUBSTANCE: method involves serial supply of the initial raw materials onto horizontal transporter perforated tapes of the multitier dryer installation combining the IR and convective drying methods, five being the optimal number of tapes, with the following conditions observed throughout the drying time: temperature - 30-35°C, constant air circulation, no condensation of evaporated moisture, prevention of spillage of moister product from upper transportation tapes onto lower tapes, constant air exchange, absence of mechanical impurities, mineral oils, yeast and mould in the air supplied, constant movement of conveyor tapes, observation of clear staged per section removal of moisture with the following parameters: on the first tape- 10-15%, on the second one - 15-20%, on the third one - 20-25% on the fourth one - no more than 15%, on the fifth one - 6-7%.
EFFECT: method allows to maximally preserve the initial condition of biologically active useful substances in the dry product ensuring quick reconditioning by way of the dry product hydration.
