FIELD: food industry.
SUBSTANCE: invention relates to the field of food industry, in particular, to the technology of production of preserved concentrates of first courses. The method provides for preparation of formula components, carrots, parsley root and onions cutting and sauteing in rendered fat, cutting and blanching of potatoes, blanching and cutting of beet root, chopping and freezing of fresh cabbage, boiling of beans to increase mass by 150%, cutting of fish fillet and herbs. Listed components are mixed with wheat flour, tomato paste, acetic acid, sugar, salt, black pepper and bayleaf. The produced mix and fish broth are packed, sealed and sterilised. At the same time they use ornamental cabbage, and components are used at the following consumption ratio, wt parts: fish fillet 250; rendered fat -12.5; potatoes 160-168.8; ornamental cabbage 62.5; beet roof 62-64.5; carrots 14.6-15; parsley root 15.6-15.8; onions -14.6-14.8; beans 50; herbs 25; wheat flour 6.3; tomato paste, in terms of 30% content of dry substances 15; acetic acid, in terms of 80% concentration 0.1; sugar 2.5, salt 18; black pepper 0.28; bayleaf 0.08; fish broth - to finished product yield of 1000.
EFFECT: method makes it possible to produce new preserves using non-conventional vegetable stock without changes in organoleptic properties of a finished product.
