SUBSTANCE: method for production of "Appetising fish" preserves envisages recipe components preparation, Alaska pollock cutting, rubbing with salt and black hot pepper, mealing in wheat flour and frying in vegetable oil, bulb onions cutting and sauteing in vegetable oil, fresh cabbages chopping and freezing, cheese grating, wheat flour sauteing and mixing with sour cream, butter, salt and black hot pepper to produce a sauce, sequential packing of a part of cabbages, Alaska pollock, bulb onions, the remaining cabbages, cheese, chicken eggs and the sauce, packing and sterilisation. One uses ornamental cabbages; the components are used at the following expenditure ratio, wt %: Alaska pollock - 738, chicken eggs - 15, vegetable oil - 78, butter - 15, ornamental cabbages - 508.2, bulb onions - 213-215.7, wheat flour - 33, cheese - 309, salt - 15, black hot pepper - 1.2, sour cream till the target product yield is equal to 1000.
EFFECT: production of new preserves with usage of non-traditional vegetal raw materials without the target product organoleptic properties modification.
