FIELD: process engineering.

SUBSTANCE: invention relates to product processing by phase separation. Continuous processing of vegetable or animal oil or fat by separation into two liquid phases, preferably, with extra removal of solid particles comprises the steps that follow. a) The product is processed in the centrifuge composed of the separator including the revolving drum accommodating the stack of troughs with lifting channels and provided with the product feed means and at least two gripping members for discharge of more dense and less dense liquid phase from the drum. Besides, there are solid phase discharge holes designed to form the area of separation between the leas dense and more dense phases (HP, LP). Note here that b) when the viscosity of denser liquid phase exceeds at least one threshold magnitude, more dense liquid phase discharge radius being adjusted.

EFFECT: continuous discharge of denser phase when the content of denser phase is smaller than that of solid phase which allows the increase in its viscosity in time moment which cannot be defined with sufficient validity.
