FIELD: confectionery industry.
SUBSTANCE: method for the production of a cocoa product includes grinding of cocoa nibs to obtain rough cocoa suspension containing a liquid part and a part formed by particles dispersed in it, separation of rough cocoa suspension at a separation stage to obtain precipitate and supernatant liquid. In this case, supernatant liquid includes cocoa butter and solid cocoa particles, while value D90 of solid cocoa particles is equal to or less than about 40 mcm, and cocoa particles amount to at least 15% by weight of the total weight of the part formed by dispersed particles. Then, ingredients of a precipitate composition containing precipitate are refined at a refining stage to obtain a refined precipitate composition, and ingredients of a cocoa product, including the refined precipitate composition and supernatant liquid, are combined at a combination stage to obtain a cocoa product.
EFFECT: invention is aimed at simplification of cocoa product recycling.
