FIELD: food industry.
SUBSTANCE: extruded pasta product has a hole passing through it in the longitudinal direction where the raw material is represented by wheat flour; the hole occludes or contracts in case of boiling or rehydration in hot water; the hole cross section configuration is as follows: multiple grooves are shaped around the cross section centre, the grooves symmetrically arranged in a circumferential direction and stretching to the outside in a radial direction from the pasta product cross section centre; the hole has an air clearance in the cross section centre; the air clearance is formed due to mutual overlapping of multiple grooves; the hole occludes or contracts in case of boiling or rehydration in hot water ensuring occlusion of the grooves with the exception of the air clearance. The method for production of instant pasta products includes extruded pasta products drying after pre-gelatinisation or without pre-gelatinisation. The pasta extruder moulding head element applied for pasta products production has a through hole in a longitudinal direction and contains: an outlet extrusion part and an inlet part where the outlet extrusion part includes an inlet extrusion hole applied for extrusion moulding of pasta products; the inlet part includes an inlet hole through which pasta dough is supplied under pressure and a pin the end whereof is inserted into the outlet part outlet hole; the shape of the pin cross section provides for formation of multiple projections around the cross section centre that are symmetrically arranged in a circumferential direction and stretching to the outside in a radial direction from the cross section centre.
EFFECT: invention allows to produce extruded pasta products with reduced boiling time and good recovery characteristics.
