FIELD: food industry.

SUBSTANCE: invention relates to food industry, in particular, to an extruded leguminous microgranule (micropellet) and to its manufacture method. One introduces leguminous meal into the installation for preliminary treatment; in the installation one performs such meal hydration and mixing to obtain hydrated leguminous mixture. One introduces the said leguminous mixture into the extruder and applies specific mechanical energy to it which is equal to 80 - 140 Wh/kg of dry mixture. Additionally, one performs, whenever required, the said mixture moistening, till the moisture content is equal to 25-30%. The extruded leguminous mixture is maintained in the extruder during nearly 4 minutes for leguminous dough production. The leguminous dough is cut into leguminous microgranules; the microgranules are dried. According to the other version of the method for extruded leguminous microgranules manufacture, after the said stage of the hydrated leguminous mixture maintenance in the extruder during nearly 4 minutes to produce leguminous dough, dough is expressed from the extruder. The said dough is relocated into the extruder for cold treatment. The dough is compressed with subsequent cooling by means of a cylinder sleeve with a water jacket. The dough is forced through an assembled matrix at the end of the extruder. The leguminous dough is cut into leguminous microgranules; the microgranules are dried.

EFFECT: invention allows to obtain high density granules having improved integrity and lower percentage of damaged granules after treatment and possessing a pleasant taste and texture.
