FIELD: food industry.
SUBSTANCE: invention relates to a canning industry, namely to a process for the production of canned banks 1-82-1000. Method includes preheating banks fruit with hot water at 85°C for 2-3 min to replace water syrup with a temperature of 95 °C. Banks roll covers self-exhaustion placed in a hot water bath temperature of 75 °C and subjected to heating for 15 minutes, raising the temperature of the bath to 100 °C. Next, sterilized jars without creating pressure in the unit when the water temperature reached 100 °C for 20 minutes, followed by cooling with cold water for 25 minutes.
EFFECT: invention contributes to the preservation of the natural components of resources used, reducing the amount of residual air in the bank prior to sealing and air removal during thermal processing, reduce the amount of boiled fruits and fruit with cracked skins can enhance the nutritional value of the final product, namely to keep the biologically active components of the feedstock, and vitamin C.
