FIELD: food industry.
SUBSTANCE: invention relates to the canning industry. A method of production of mandarin compote is characterized in that the preheating is carried out in fruit jars with hot water at 85 °C for 2-3 min to replace water syrup temperature of 95 °C self-exhaustion banks roll covers and subjected to sterilization without creating a back pressure in the device for a given regime.
EFFECT: invention contributes to the conservation of natural ingredients used raw materials, reduce the amount of residual air in the jar before sealing and removal during heat treatment, reduce the amount of boiled fruit, increasing the nutritional value of the finished product, namely, a more complete preservation of biologically active components of the feedstock, and vitamin C, lower costs and enhance the competitiveness of the finished product by saving heat and electricity.
