FIELD: food industry.
SUBSTANCE: invention relates to food industry, namely to bread making. There is offered a method for production of bakery products, involving loading of dough pieces, proofing, baking and unloading; at that, transportation of products during unloading process after baking is performed simultaneously with the products cooling by air flow at a temperature of 25-30 °C for 1-1.5 h, while transportation of bakery products is performed at a rate of 7-12 m/h. Herewith, the cooling air flow is preliminarily filtered, for example, with the help of bacterial filters with cell size of 1-2 um.
EFFECT: invention consists in reduction of time of production process due to combination of operations.
