FIELD: food industry.
SUBSTANCE: invention relates to method of manufacturing of canned second course dinner dishes. Method for production of preserves "Meatballs with cabbages in sour cream sauce with tomato paste and onions" envisages preparation of recipe components, soaking in milk and chopping wheat bread, chopping of meat and part of bulb onions. Then, listed components are mixed with part of salt and black hot pepper to produce mince, mince moulding, mealing in wheat flour and frying in melted fat to produce balls. Then one performs fresh ornamental cabbages chopping and freezing, cutting, sautéing in melted fat and straining, remaining bulb onions, wheat flour sautéing. That is followed by mixing strained part of bulb onions, wheat flour, sour cream, bone broth, tomato paste, remaining salt, remaining black hot pepper and Laurel leaf to produce sauce. Then, meatballs, cabbages and sauce are packed, sealed and sterilised.
EFFECT: method allows to produce new preserves with usage of non-traditional vegetal raw materials without altering of target product organoleptic properties.
