FIELD: food industry.
SUBSTANCE: invention relates to the food industry, in particular, to a dehydrated food product in the form of flakes and to such product manufacture method. The flakes have porosity equal to 30 - 70%, volume density equal to nearly 100 g/l - 300 g/l; the product has the total moisture content equal to less than 5 wt %; the homogeneous composition has uniformly dispersed ingredients.
EFFECT: dehydrated food product is quickly dissolved and/or dispersed in water, does not form clots and has a natural appearance desirable for consumption.
