SUBSTANCE: invention relates to bakery industry. Method of producing bakery products comprises kneading dough, fermentation, handling, moulding, proofing and baking, acceleration of dough preparation is ensured by introduction of vegetable components, specifically: activation of pressed yeast by means of milled common juniper fruit in amount of 4 % of weight of whole flour.
