FIELD: food industry.
SUBSTANCE: invention relates to dairy industry. Method for production of fermented milk bioproduct includes introduction of prepared milk base protein-carbohydrate concentrate, pasteurisation, maintenance for 5 hours, cooling to temperature of 40±2°C, introduction of watermelon honey is dissolved in hot milk at a temperature of 85°C and holding for 15 minutes and cooled to temperature of 40±2°C, and starter composition BK-Altai-LS-Bifi, stirring, bottling and ripening in thermostatic chamber at a temperature of 40±2°C for 6 hours until formation of dense clot and titratable acidity 65-75°T , cooling and implementation.
EFFECT: method enables to produce a fermented milk bioproduct with high organoleptic, physical-chemical and microbiological indices, increased biological value and storage capacity, with bifidogenic properties and aimed at improvement of protein-carbohydrate and lipid metabolism of consumer.
