SUBSTANCE: invention relates to a method of controlling bacterial contamination (microbial contamination) during yeast-generation and storage of yeast in production of alcohol, beer, kvass, bakery products, baking and fodder yeast. Method envisages at the stage of cultivation of s. cerevisiae introduction into the suspension of colloidal solution of silver nanoparticles stabilised with guarana to concentration of particles in the medium 0.001-0.002 g/dm3. After accumulation of sufficient amount of yeast biomass is fed into fermenting compartment to fermentation of starch-containing material. If necessary, cleaning infected yeast for reuse in yeast suspension preparation nanosilver to concentration of particles in the medium 0.003-0.004 g/dm3. Treatment is carried out for 3-6 hours at temperature 5-15°C and treated yeast can be repeatedly introduced in the process.

EFFECT: invention provides preventing developing bacterial infections of yeast Saccharomyces cerevisiae in process of cultivation and fermentation of raw material in production of ethyl alcohol-based product.
