FIELD: fermenting industry, biotechnology, microbiology. SUBSTANCE: invention relates to the use of the novel yeast strain for alcohol and other products producing in this branch. The novel strain of yeast is obtained by ultraviolet irradiation of cells of the strain Saccharomyces cerevisiae, strain XII in combination with chemical mutagens. Strain is deposited in collection of pure cultures of Microbiology and Biochemistry department of Voronezh State Technological Academy at N VGSH-2. The strain Saccharomyces cerevisiae VGSH-2 shows 2.5-3-fold increased activity of fructofuranosidase and synthesizes inulase also. EFFECT: increased activity of enzymes. 4 tbl, 3 ex
