FIELD: food industry.
SUBSTANCE: invention relates to food industry and can be used for preservation of various products. During preservation method, first products for preserving are washed, cleaned and ground, and then placed in a heat resistant container made of a polymeric material that can withstand temperatures up 200 °C, and heat-treated at a temperature 120-200 °C until products are cooked. Heat-resistant container before heat treatment is not sealed, and an opening is left for steam, which is hermetically sealed when product is fully cooked. Then around heat-resistant container is created a damping shell by a sealed package of heat-resistant container with finished product in modified gas medium, for example, nitrogen, using packets of polymer, high-barrier films, intended for packing in gas medium.
EFFECT: use of invention prolongs shelf life of canned food.
