FIELD: food industry.
SUBSTANCE: invention relates to meat processing industry and can be used for preparation of brine for injection of meat raw material in production of smoked-and-cooked product of whole muscle. Recipe composition of brine for injection of meat raw materials comprises per 100 kg of unsalted raw materials nitrite salt - 7 %, preventive salt - 7 %, "Glimalask" food additive - 0.4 %, pectin - 0.6 %, marjoram spice - 0.5 %.
EFFECT: method provides higher environmental safety of product due to reduction of residual amount of table salt and sodium nitrite with preservation of colour intensity and high organoleptic indices.
