SUBSTANCE: invention relates to meat processing industry, namely to production of boiled ham in shell. Method provides hip saline ampoule by salting with saline brine containing salt, color stabilizer, its massaging, maturing, rubbing with a mixture of garlic, black pepper and red pepper and heat treatment. Brine additionally contains hydrated flour of extruded sprouted lentils enriched with iodine and selenium and Jerusalem artichoke flour. One has selected quantitative ratio of ingredients.
EFFECT: biological and nutritional value of ham, higher yield of finished product are increased while maintaining its organoleptic characteristics.
