FIELD: food industry.
SUBSTANCE: invention relates to the food industry, in particular to the production of pork meat rolls. The method includes the preparation of the main raw meat, as which is used the hip part of the pork half-carcass cut, injecting it with a curing brine based on the alkaline fraction of electrochemically activated water, followed by massaging and holding, plating the main raw meat, preparing the filling in the form of minced meat from chicken by-products, flaxseed flour, gelatin, garlic, onions, carrots, salt, water and spices, distribution of the filling over the layer and the formation of rolls, pre-pressing and boiling of rolls, cooling of the finished product. The quantitative ratio of the initial components of the meat roll and the curing brine has been selected.
EFFECT: invention reduces cooking time of pork roll, increases nutritional value, yield of finished product, expands assortment of meat rolls.
