FIELD: food industry.

SUBSTANCE: invention relates to food industry, specifically to production of a food colouring agent from refuses of nightshade Sunberry for confectionary, food-concentrates, bakery and preservation industry. Refuse of nightshade Sunberry is mixed with water and citric acid in containers, equipped with a mixer. Components are mixed in accordance with recipe at following ratio, kg per 1,000 kg of dyes: for dye of dark-violet colour - refuses nightshade Sunberry 3,500 kg, water 10,500 kg, citric acid 10 kg; for dye of bright-violet colour - refuses of nightshade Sunberry 3,500 kg, water 10,500 kg, citric acid 15 kg; for dye of violet-red colour - refuses of nightshade Sunberry 3,500 kg, water 10,500 kg, citric acid - 20 kg; for dye of red-violet colour - refuses of nightshade Sunberry 3,500 kg, water 10,500 kg, citric acid - 25 kg; for dye of claret-red colour - refuses of nightshade Sunberry 3,500 kg, water 10,500 kg, citric acid - 30 kg. Mixture is heated to 35 °C and held for 2-3 hours with periodic mixing until accumulation in solution of soluble dry substances (SDS) of 5-4, 5 % by reflectometer. Extract is decanted. Extract is placed into a vacuum apparatus and concentrated by vacuum at residual pressure 21.3 kPa and temperature of 60 °C to SDS content of 50 %. Ready dye is fed for packing into a glass or combined foil and laminated paper with capacity of 1.0-2.0 dm3 with pasteurisation at 95 °C for 20-30 minutes and further cooling to 20 °C.

EFFECT: proposed method enables to produce a dye of several colours which is low-cost,

comprises use of non-traditional raw materials - refuses nightshade Sunberry.
