FIELD: food industry.
SUBSTANCE: invention relates to food industry and catering, specifically to methods of producing pelmeni. Method comprises preparation of dough, mince and moulding pelmeni, freezing and packing. Dough is prepared using wheat flour, yam flour, eggs, water and salt, then dough is rolled. Mince is prepared using quail meat, bulb onions, salt and water. Quantitative ratio of components is selected.
EFFECT: obtaining a culinary product with improved organoleptic properties, high nutritional value, having antiallergic and functional properties.
