FIELD: metal processing.
SUBSTANCE: cutting plate is intended for vertical cutting of meat and fish product and has a wedge-like shape with sharp-corner or round cutting edge, two areas of sides of external action and upper side. To improve process of diffusion-molecular saturation of surface layers of meat or fish product with food ingredients it is equipped with threaded or conical transition insert, intended for supply of ingredients to areas of sides of external action and located on upper side of plate. Inside plates there are, connected with vertical opening of insert, dead cavity and a through horizontal opening, combined with said cavity and extending to both sides of external action on cut product. Groove of plate around transition insert is sealed or is soldered.
EFFECT: cutting plate is made of high speed steel with application of coating of titanium carbonitride with thickness 10-15 mcm.
