FIELD: technological processes.

SUBSTANCE: invention relates to a composite impact-cutting tool for preparation of a meat or fish product. Tool comprises at least two rows of acute angled comb blades. Sharpening zone is made at the top of each separate blade. Each group of cutting blades of the comb has the general shape of the base, which is outlined by a ledge of flat shape, which changes into rounding. In centers of said ledges there are two holes through which through rivets of identical diameter and thickness from 0.1 to 50 mm pass. Combs are made with alternating cutting blades with an even and an odd number of tops and are installed with displacement by half of pitch of tops of their cutting blades into bent ends of the handle. Combs are retained on the handle by the thrust rivets of the through rivets and wing nuts.

EFFECT: resulting in multiple cutting of cores and fibers of products.
