FIELD: food industry.
SUBSTANCE: disclosed is a food product with colourless coating on surface. Coating contains a quercetin derivative or quercetin derivative ester. Ester bond is formed at one of hydroxyl groups of quercetin derivative. Coating of surface of said product additionally contains a chemical base. Chemical base is selected from sodium bicarbonate, sodium hydroxide, L-arginine or combinations thereof. Method of colouring surface of product while heating includes application of said coating on surface of product and then heating.
EFFECT: invention enables to obtain a product with yellow-brown golden surface even when heating in a microwave oven.
