FIELD: food industry.
SUBSTANCE: invention relates to food industry. Proposed a method of treating a food mass selected from the group consisting of a dough-based product, a dough product, a frozen dough or a test-based panad, including defrosting, heating, heat treatment and/or baking of said food mass in a microwave radiation field. Food mass contains the microwave absorber added to it, chosen among the orthophosphates (PO4)3-, hydrophosphates (HPO4)2-, dihydrogenphosphates (H2PO4)-, diphosphates (P2O7)4- (pyrophosphate), metaphosphates [(PO3)22-]n, tripolyphosphates (P3O10)5- and high-condensed phosphates with an average chain length of 3 to 50, as well as carbonates, hydroxides, citrates and calcium gluconates (Ca), magnesium (Mg), iron (Fe), Zinc (Zn) and copper (Cu), provided that the water solubility of the microwave absorber at 20 °C is not more than 50 g/L of water and that the microwave absorber has pore volume of more than 3.0×10-3 up to less than 200×10-3 cm3/g.
EFFECT: invention provides improved defrosting, heating, heat treatment and/or baking of the product in the microwave radiation field.
