FIELD: food industry.
SUBSTANCE: invention relates to food industry, specifically to production of carbonated ice cream. Ice-cream mixture before carbonation is placed in a vessel with a tube for supplying carbon dioxide into ice-cream mixture under pressure of 1.5–4 atm and in weight ratio of 100 g of CO2 per 1 kg of product, wherein carbonation process is carried out at temperature of 2–4 °C for 1–15 minutes.
EFFECT: invention enables to produce carbonated ice cream of high quality, and prevents deterioration of organoleptic properties.
