FIELD: wine industry.

SUBSTANCE: invention relates to the wine industry for the determination of sparkling properties in beverages saturated with CO2. A method for determining the sparkling properties of beverages saturated with CO2 includes pre-sampling; cleaning the bottle from labels; thermostat control for 1 hour at 20°C; weighing a bottle with a sparkling drink, an aphrometer with a tap, a foam trap with a gas outlet tube, a gasket and a universal case; measuring the excess pressure of CO2 in the bottle; characterized in that after the excess CO2 pressure is reset to atmospheric pressure by gradually opening the aphrometer tap (preventing the release of foam), with the tap fully open under thermostatic conditions, the weight of the beverage bottle is determined on precision scales of high accuracy (class II) at regular intervals with an interval of 1 min for an hour and the construction of a CO2 desorption curve, where time in minutes is set along the abscissa axis, and the mass of carbon dioxide released (g) on the ordinate axis, makes it possible to cope with the above problem. During the measurements, the sparkling properties coefficient (K) is used as an indicator characterizing the sparkling properties of the drink, calculated by the formula: K = C:V, where C is the total carbon dioxide content in the sample of the drink (g), V is the rate of carbon dioxide desorption over the selected time interval (g/min).

EFFECT: invention ensures a more accurate measurement when using standard laboratory equipment.
