FIELD: food industry.
SUBSTANCE: invention relates to the food industry and can be used in the production of edible ice for beverages. Carbonated food ice is frozen water. Moreover, sterile pre-degassed bidistilled water is used. The specified water is saturated with carbon dioxide gas at an overpressure of more than 0.2 atm and up to 4.0 atm at + 8 °C.
EFFECT: invention provides an increase in the refreshing and thirst-quenching effect of ice while eliminating infection with pathogens of infectious diseases and allergic reactions, as well as deterioration of organoleptic properties, reduction of the biological value of the product, reduction of shelf life and accumulation of toxic oxidation products.
