FIELD: food industry.
SUBSTANCE: invention refers to food industry. Vegetable preserves production method involves crushing of raw material, its frying and pureeing, mixing with auxiliary materials, packaging and sterilization. Flour from sprouted triticale grains and dietary fibers from secondary products of marrow squash processing are additionally introduced.
EFFECT: proposed method ensures improvement of organoleptic and rheological properties of a product.
