FIELD: food industry.
SUBSTANCE: according to the method, a stream of dispersed air is introduced along the longitudinal axis into the central area of the milk stream swirling into the vortex current, saturating the milk. The process is repeated many times. Heating the milk is carried out simultaneously with the aeration process due to the heat released during the flow of the swirling stream. The device for carrying out the method includes a working container, a pump and lines for milk supply and discharging the separated products, a vortex aerator installed in the portion for milk supply into the working container, and a bypass pipe for recycling the milk to the supply line, wherein the pipe for milk supply in the working container is mounted tangentially to the housing of the working container.
EFFECT: increasing the technological process productivity of milk separation and reducing energy costs.
