FIELD: food industry.

SUBSTANCE: method for processing vegetable waste, in particular shells of seeds and nuts, namely, cocoa shells, shells of grain crop seeds and rice waste includes the following stages of the method: (i) provision of vegetable waste with the share of shells at least 20 wt %; (ii) at least partial fermentation of vegetable waste components, in particular, at least partial fermentation of one carbohydrate, one sugar, one fat and/or one protein and/or at least partial hydrolysis of the vegetable waste components, in particular at least partial hydrolysis of a carbohydrate, a sugar, a fat and/or a protein; (iii) separation of the liquid phase with dissolved components from the solid phase with dietary fibers and subsequent processing of the solid phase into a valuable product. The solid phase of the product is used as food dietary fibers, and the liquid phase - as raw material for loading a biogas plant, in particular for generating electric current, or as an additive for energy drinks. The method of processing the liquid phase includes (i) producing biogas in a biogas plant from at least part of the vegetable waste, (ii) using at least part of the biogas for providing energy in the manufacturing and/or processing of the product, in which crop residues are left, which are, in turn, processed at least partially by means of using this method. The plant for processing the liquid phase comprises: production equipment, in particular a roasting device, or a roasting device and a reservoir for hydrolysis, or a roasting device and a fermentation reactor, a reservoir for biogas, a supply device by means of which at least part of the vegetable waste is transferred from the production equipment to the reservoir for biogas and the device for processing biogas, wherein the resulting biogas in the biogas reservoir serves as a source for actuating the production equipment. The dietary fibers obtained from vegetable waste contain fat in an amount of less than 5 wt %, and/or the mass ratio between water-insoluble and water-soluble dietary fibers is more than 6.5.

EFFECT: invention allows to process vegetable raw material waste into valuable products.
