FIELD: food industry.
SUBSTANCE: invention relates to methods for producing apple compote in jars SKO 1-82-500. After washing, inspection, calibration, cutting and peeling, the fruits are packed into jars and poured with syrup. Then the jars with the product are placed in the microwave chamber and the contents of the jars is heated to 83-85°C by microwave energy with the frequency of 2400±50 MHz for 1.5-2.0 min. Thereinafter the jars are sealed and sterilized in an autoclave at the accelerated high-temperature mode.
EFFECT: reducing heat treatment duration and improving the quality of the finished product.
