FIELD: food industry.
SUBSTANCE: device for determining the thermal conductivity factor of fibrous food products of animal origin consists of a split housing made of a heat-insulating material, in the lower part of which there is a heat heater, and on its upper part there is a refrigerator, between which three heat meters are arranged in contact, made in the form of flat copper plates, between which two ampoules are fixed. Wherein the ampoule arranged between the upper and the middle plates is intended for the product being tested, and the ampoule arranged between the middle and the lower plates - for the reference product. Thermal sensors are installed on the copper plates, and a vibro-initiator of crystallization is installed in the ampoule with the product being tested. The refrigerator is represented by a Peltier refrigerator.
EFFECT: increasing the speed and accuracy of determining the thermal conductivity factor of fibrous food products of animal origin.
